Fruit cake

Ingredients
250g/8oz self-raising flour
½tsp ground mixed spice
½tsp ground cinnamon
125g/4oz butter or margarine
125g/4oz soft brown sugar
125g/4oz currants/sultanas/mixed fruit
50g/2oz glacé cherries, quartered
1 large egg
5tbsp milk
Method
Line and grease a shallow 8 inch cake tin. Sift the self-raising flour, mixed spice and cinnamon into a mixing bowl, add the fat and rub in with the fingertips until the mixture resembles breadcrumbs.
Stir the sugar, currants and glacé cherries. Add the egg and milk to the mixture and beat thoroughly.
Put the mixture into the prepared tin and bake in a preheated oven, 180ºC (350ºF, Gas Mark 4), for 30 minutes. Leave in the cake tin for a few minutes, then turn it out on to a wire rack to cool.
